TT w/Linky: Coffee Cup Egg Scramble

On this "Thankful Thursday" I have found a little something that has made my mornings a little bit easier....the Coffee Cup Scramble.
















I love scrambled eggs with a little grated cheese but many mornings I'm short on time and just getting the frying pan out, waiting for it to heat up and scrambling eggs takes too long.  If I can save five minutes when getting the kids ready for school, everyone is happy.  This little coffee cup scramble takes all of three minutes total...so easy and really good.

Here's what you need, along with two tablespoons of milk.




















Spray the inside of a coffee cup with non-stick spray.  Crack the two eggs into the cup and add the milk and mix it up.




Microwave the mixture for 45 seconds, stir and then microwave for an additional 30-45 seconds.


















Top with some salt and pepper and grated cheese.















Include a glass of milk and maybe some toast and here you have a quick nutritious and delicious breakfast.
