We are down to a few roasts and a whole lotta ground beef in our freezer. Our current herd of Pasture Raised natural beef will not be ready for harvest until June so between now and then I need to get creative with what we have.
Honestly, this is probably the best meatloaf I have ever made/tasted. I love barbeque sauce so adding that to the mix was just awesome! Oh, plus covering it with bacon added to the flavor also.
Here's what I did....{full recipe below} Mix onion, egg, dried Italian bread crumbs, brown sugar, red wine vinegar, Worcestershire sauce, dijon mustard, Kosher salt, pepper, barbeque sauce and ketchup together with the ground beef.
My favorite of making meatloaf is mixing with my bare hands...love that squishy feeling. Paige {6} was just a bit envious while she watched me make my way through two pounds of ground beef and ingredients squishing through my fingers. So much fun and if she wasn't sick, I would have let her try it herself.
After mixed, form it in to a loaf pan.
Lay bacon strips across the top and bake at 350 degrees for an hour.
Caramelized, crispy edges are to die for.....
Goes well with sauteed green beans and onion. Even picky Paige cleaned her plate last night.
Barbeque Bacon Meatloaf
Ingredients:
2 pounds of ground beef
1 cup dried Italian bread crumbs
1 onion, diced
1 egg, beaten
1 1/2 tsp Kosher salt
1/2 tsp pepper
8 oz barbeque sauce
6 oz ketchup
3 T red wine vinegar
3 T brown sugar
2 T Dijon mustard
2 T Worcestershire sauce
Bacon slices
Directions:
Preheat oven to 350 degrees.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, BBQ sauce, ketchup, mustard, brown sugar, Worcestershire sauce with your hands until well incorporated.
Place the mix in a loaf pan and cover with bacon strips. Bake for one hour.
