I am So So thankful for this super simple chopped Asian cabbage salad recipe. My friend, Cindy, makes it and I just recently asked her for the recipe. It's made with good ole' Top Ramen noodles believe it or not! It takes about 10 minutes to make, start to finish. It's healthy, crunchy and very tasty. Perfect for anything from a back yard BBQ to a simple week night meal.
Here's what you need....{full recipe below}
Chop up one head of cabbage.
Cindy uses the seasonings from Oriental flavored Top Ramen, but I couldn't find that flavor, so I was forced to modify. Instead of using the chicken Top Ramen seasoning packet, I mixed in some Tamari to olive oil, salt, sugar, water and rice wine vinegar.
Crunch up one {or two} packages of the Top Ramen noodles, a handful of slivered almonds and place in a skillet to brown.
I also toasted up some sesame seeds as well.
I love the flavor the toasted sesame gives to any Asian dish.
This salad would to GREAT with some Chicken Skewers or skirt steak.....yum!
Asian Chopped Cabbage Salad
Ingredients:
1 head of cabbage, chopped
1-2 packages of Oriental Flavor Top Ramen
2 T Oil
1 tsp salt
1/4 cup sugar
1/3 cup rice wine vinegar
handful of slivered almonds
2 T sesame seeds
Directions:
Chop cabbage, set aside. In a measuring cup, add 2 T oil, the Top Ramen seasoning packages or 1/8 cup of Tamari, fill with water until it reaches just over 1/2 cup mark. Add salt, sugar and rice wine vinegar to the measuring cup and stir so it's all blended.
Crunch up the package {s} of Top Ramen and place in skillet, add the slivered almonds and sesame seeds and brown....takes just a few minutes.
Mix all together and refrigerate. Enjoy!
