Crock Pot Chicken Apple Curry

Wednesdays in our house are Crock Pot dinner nights.....with baseball practice at 5-7p.m., soccer practice from 6-7p.m., these kids are hungry by the time we get home at 7:15 and something needs to be ready to go by the time we get home.

I really enjoy the chicken Crock Pot meals, because they only take four hours to cook and if I'm out of an ingredient or two, I have time to run to the store in the a.m. without feeling rushed to get the meal in the Crock Pot right away.
















This Crock Pot Apple Curry recipe was a hit the other night.  It was my first time making it and although I love the curry flavor, I was a little aprehensive making it for the family, but it was a HIT!

Crock Pot Honey Teriyaki Chicken

Just because it's summer doesn't mean you can't utilize that crock pot of yours.  I saw this recipe online and modified it to what I had on hand in the fridge.  So yummy, easy, light and perfect for a weekday summer night.


















Here's what you need for success.....

Crock Pot Honey Teriyaki Chicken

1 1/2 pound boneless/skinless chicken breasts
1/2 cup honey
1/4 cup teriyaki sauce
2 tablespoons onion powder
2 tablespoons ketchup
1 tablespoon oil
1/2 teaspoon dried garlic flakes {I used Garlic Gold Nuggets}
2 teaspoons cornstarch dissolved in 3 Tablespoons water
Sesame seeds

*Put chicken into crock pot. 
Combine honey, teriyaki sauce, onion, ketchup, oil, and garlic. Pour over chicken. 
Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. 

*Remove chicken from crock pot, leave sauce. 
Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. 

*Cut chicken into bite size pieces and return to crock pot - can leave chicken in and simmer on low or serve. 
Sprinkle with sesame seeds and serve over rice.

The Crock Pot is my best friend in these times of little league games x's 2, swim, dance class and 4H meetings.  I don't know how I would live without it.  I will try almost anything in the Crock Pot/Slow Cooker.  We had one remaining London Broil in the freezer so for the first time ever, I tried it in the Crock Pot.

Crock Pot Asian Beef Broccoli

In honor of having heard Temple Grandin speak again yesterday, I'm sharing a Crock Pot beef dish with you today.  Over a year ago, Dominic and I had the pleasure of having lunch with Temple at a friend's house and then attended her speaking engagement afterwards. She is always so inspiring. I love her no-nonsense, tell it like it is approach. 


With the kids after school soccer practice and other activities this fall, I sometimes feel like a taxi cab driver, I'm sure you all can relate.  It seems most practices and activities, 4H meetings and such are scheduled either right before or just after dinner time, so preparing a home cooked meal can sometimes be tough.  My Crock Pot is definitely going to be my best friend in the up-coming months.

We raise our own pasture raised beef, so we typically have a freezer full of meat.  Perusing the freezer, I discovered we have quite a variety of roasts to choose from.  My kids like roast but they much prefer steak, venison or hamburgers.  I pulled out a Chuck Roast and tried this new recipe for Crock Pot Asian Beef Broccoli and it was a hit!  My kids even ate the rice without any threats or bribery on my part.

Easy Pulled Pork for the World Series

Once again, we'll be watching our beloved S.F. Giants trying to get one step closer to their 1st World Series win.  No extra time needs to be taken away from game time to cook dinner so once again the slow cooker is in use.  This time, pulled pork.  A perfectly easy and delicious game day dinner.  Slow cooker recipes are my 'go to' meals in the winter time.














Here's what you need...............













Plus a pork butt {shoulder} roast.  This one was around 4 pounds.  I trimmed as much of the fat off of it as I could.  Placed it in the slow cooker.













I then mixed the ingredients above as per directions on the back of the McCormick package and poured it over the top of the pork butt covered it and set the slow cooker on low for 8 hours.

After 8 hours, it looks like this.













Then I shredded the entire thing with two forks.  At this point, the pork butt roast just falls apart.  Mix it all up really well and serve.
I served it up on hamburger buns.  Yum!













We also have a huge bag of grated mozzarella cheese in the fridge, so some of that became the topping.
