Quick Week Night Grilled Cheese with Chicken

There have been a few sniffles going around in our house lately and with the sniffles comes the craving of Chicken Noodle Soup....an easy week night meal for sure but something a little more substantial is needed to go with the soup.  Grilled Cheese with Chicken Tender Sandwich.


















Chicken Tenders are super quick to cook, much quicker than chicken breasts...and the kids have fun eating these little guys.  I roll them in bread crumbs, no egg, and add olive oil to a hot skillet and cook about 4 minutes per side.....done.  Set aside.




Butter one side of  the sliced bread you've chosen to use for your sandwiches.  I chose sliced sourdough bread, but chibata bread would work equally as well also.

























Pop the sliced bread on the grill, or skillet, butter side down until toasted, butter side two as side one is grilling, then flip to side two.  Remove from skillet.



Spread mustard on one side of grilled bread.  I use a grainy dijon.  Add two chicken tenders, a slice or two of Swiss cheese, a slice of ham and some baby spinach leaves and top with the second slice of grilled bread.





Put the assembled sandwich back on the warm skillet and use something heavy to place on top.  I use a cast iron skillet.  Grill 5 minutes on each side or until the swiss cheese has melted into gooey goodness.

WW: Spooktacular Treats made with Dairy {recipes}

If your kids are like mine, then Halloween rates right up towards the top of the list when talking holidays.  Why?  For us, it all has to do with the decorating and the ghoulishly ghouls that are spotted everywhere from school to the neighborhood library and of course the candy they collect has a little something to do with it as well. 

When I received recipes for these kid-friendly, spooky and fun confectionery-free treats from the California Milk Advisory Board, I just had to share with you!  All the recipes in the photo are made in 30 minutes or less, and use Real California dairy products.  Food is so much more fun to eat when it looks like this, whether you're a kid or an adult, right?!

I think any of these would be perfect for a Halloween party at school, at home or just as an after school snack!  My kids are gonna love the Spider Web Pizza, the Toasted Ghosts and the Yogurt Ghost Pops for sure.

Best of the Web: Ice Cream Cone Cupcakes

Ice Cream Cone Cupcakes.  What could make a kid happier on any given day?!  Have you tried to bake these yet?  I have not, so I searched the web and found two strong contenders.

The first, is the Paula Deen version, where she uses actual flat bottom ice cream cones and box cake mix.  Looks pretty simple.














Ingredients

1 box favorite cake mix
1/2 cup cold water
2 eggs
3 tablespoons water
1 teaspoon vanilla extract
1 tablespoon cooking oil
24 flat-bottomed ice cream cones

Directions
Preheat oven to 350 degrees F.

Combine cake mix and 1/2 cup cold water. Beat 2 minutes. Beat in eggs, water, vanilla and oil. Mix well. Place ice cream cones in muffin tins or on cookie sheet and fill each 1/2 full with batter. Bake 20 minutes or until cake springs back to the touch. Frost and decorate when cooled, if desired.

Next UP is the Martha Stewart version.  Now Martha, puts a twist on the original ice cream cone cupcake.  First of all, they're mini and are baked in little dixie-type cups and second, she uses ICE CREAM as the topping! 

June IS Dairy Month, afterall. 

Oh, and her recipe is from scratch and here it is.

















Makes 4 dozen mini cupcakes.

Ingredients
1 1/2 cups plus 2 tablespoons all-purpose flour
1 1/4 cups sugar
3/4 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 large egg, plus 1 large egg yolk
1/2 cup plus 2 tablespoons warm water
1/2 cup plus 2 tablespoons buttermilk
1/4 cup plus 1 tablespoon vegetable oil
1 teaspoon pure vanilla extract

Directions
1.Preheat oven to 350 degrees. Line mini-muffin tins with paper liners.

2.Sift flour, sugar, baking soda, baking powder, and salt into a mixer bowl. Transfer bowl to mixer, and add egg, yolk, water, buttermilk, oil, and vanilla. Beat on low speed until mixture is well combined and smooth, about 3 minutes.

3.Divide batter among liners, filling each cup about 2/3 full. Bake, rotating tins halfway through, until golden brown and a tester inserted into centers comes out clean, about 17 minutes. Let cool in tins on wire racks for 30 minutes. Invert cupcakes onto racks, and let cool completely. (Cupcakes can be stored for up to 3 days.)

Kids....Get Cookin'!

Yesterday at Marin County Farm Day, one of the booths Bryce stopped at had a spin the wheel game that the kids could play and receive prizes.  He was ecstatic when he came back with his very own kid's cookbook.  It's titled Kids......Get Cookin'! and it's put out by the CA Dept. of Public Health and here's the link to the pdf version of it {English and Spanish}:  Kids...Get Cookin'!  for all 23 kid friendly recipes.

Today was my day to teach cooking to the K-1 class at Bryce's one-room school and he thought it would be a good idea to pick a recipe out of his new cookbook.....so we did.  Smoothie day!

Here's what you need: 
1/4 cup milk
1/4 cup o.j.
1/4 cup yogurt
1 banana  
1/2 cup frozen berries
Blend all together in a blender or Magic Bullet and serve.












There are only four kids in the K-1 class at school, they're all high energy boys, so when I can teach them a recipe that doesn't require much sugar, it's a bonus......for me.......and the rest of the school.


One of the boys {not this one} told me that his mom doesn't allow him to 'pour' when helping with the cooking at home .........but he learned to do it today and he didn't spill a drop.













Anything that's loud and has a motor, boys are ALL over.  They were diggin' the Magic Bullet.
