Bon Appetit's Mediterranean Egg Salad

One of my favorite breakfasts is egg salad on toasted whole wheat bread so when I saw this recipe from Bon Appetit for Mediterranean Egg Salad, one, I immediately began craving it and two, I had to share with you all.

Are you a fan of egg salad??  I could eat it for breakfast, lunch OR dinner.

INGREDIENTS

  • ¼ cup olive oil
  • 1 tablespoon za'atar {see below}
  • 2 teaspoons fresh lemon juice
  • 4 hard-boiled large eggs, chopped
  • ½ cup chopped green olives
  • 2 tablespoons fresh cilantro leaves
  • 2 tablespoons chopped red onion
  • 2 tablespoons toasted pine nuts
  • Kosher salt and freshly ground black pepper
  • Toast 

 Za'atar is a spice blend that translates from Arabic to the word "thyme." This is convenient, because there is thyme in za'atar. Also, you'll traditionally find sumac, sesame seed, and salt in the mix—some versions contain other spices and herbs, like marjoram, cumin, oregano, or hyssop. There's no exact science to mixing za'atar, though, because every home cook has a unique version. It's pronounced ZAH-tahr, and is found most frequently in Middle Eastern countries, flavoring everything from hummus to pita bread.

Preperation:

Whisk together oil, za’atar, and lemon juice. Toss with eggs, olives, cilantro, onion, and pine nuts; season with salt and pepper. Serve on toast.

Citrus Blueberry Loaf!


I enjoy blueberries.  Blueberry muffins, pies, fresh out of the carton and in this Krusteaz loaf mix with some orange zest added to the mix.  It's fresh and light tasting and I think would be perfect for a Sunday morning brunch.  Maybe even to begin Easter Sunday paired with a cup of tea or steaming hot coffee.   

Prep time on this is about 5 minutes.  Easy.  





Ingredients

1 package Krusteaz Wild Blueberry Muffin Mix (1 pouch muffin mix and 1 can blueberries)
1/3 cup water
1/3 cup vegetable oil
3 eggs
2 teaspoons finely grated orange zest

Instructions

  • Preheat oven to 350°F.
  • Lightly grease or spray 8 ½ x 4 ½ x 2 ½-inch loaf pan with non-stick cooking spray.
  • In a medium bowl, blend together muffin mix, water, oil, eggs and orange zest.
  • Drain and rinse blueberries; gently fold into batter.
  • Spoon batter into prepared pan.
  • Bake 44-48 minutes or until toothpick inserted into center comes out clean.
  • Cool 10 minutes and remove to wire rack. Makes 1 loaf.

Strawberry Buns

Sometimes I feel like baking but don't always want to do it from scratch.  And on this particular morning, it was exactly how I felt.  The result....Strawberry Buns.

Rather than bake this strawberry cake recipe in cake form, I used little aluminum tins in the shape of mini pies....so cute.  The result are little muffin tops which I call 'Buns'.




Fun for a brunch, a girl's birthday or maybe if you fancy strawberry cake!  I topped mine with Whip Cream in a Jar, you can make yourself in minutes.

So here's the modified, easy, no thinking, ready to mix recipe by Paula Dean....



















  • Strawberry Buns

  • 1 (18.25-ounce) box white cake mix
  • 1 (3-ounce) box strawberry-flavored instant gelatin
  • 1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water

Directions

Preheat oven to 350 degrees F. Lightly grease mini tins or a muffin top baking tray.  If you're using the mini tins, I placed mine on a baking sheet to place in the oven.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 12-15 minutes, or until a wooden pick inserted in the center comes out clean.
Cool in pans.

Mother's Day Onion Frittata


With Mother's Day coming this Sunday, I thought this Bon Appetite Onion Frittata recipe would be a perfect go-to recipe, especially if you're looking for something easy and last minute.  If you don't like onions, use scallions or asparagus instead!

Ingredients
8 large eggs
1/2 cup finely grated Parmesan
3 large fresh basil leaves, torn into pieces
3 large fresh sage leaves, minced
1 tsp. minced fresh rosemary
1/4 tsp. kosher salt
1/8 tsp. freshly ground black pepper
3 Tbsp. extra-virgin olive oil
1 cup thinly sliced onion
1/3 cup whole-milk ricotta

Preparation
Preheat oven to 400°. Whisk first 7 ingredients in a medium bowl; set aside. Heat oil in a medium ovenproof nonstick skillet over medium-high heat. Add onion; sauté until soft, about 6 minutes. Reduce heat to low. Stir in egg mixture. Spoon dollops of ricotta evenly over.

Cook until frittata begins to set, about 2 minutes. Place in oven; bake until just set, 7-9 minutes. Slide the frittata onto a platter. Cut into wedges; serve hot or at room temperature.

BOTW: Easy Strawberry Bruschetta for Brunch

Are you looking for an EASY brunch recipe?  I was, and look what I found for my Best of the Web this week on Eating Well....

Strawberry Bruschetta

Sweet and gooey strawberries topped on mascarpone cheese, all upon whole grain, toasted bread.  So easy to put together and you can even make the strawberry mixture ahead of time and just re-heat when ready to serve so it's nice and warm at serving time.
