TT w/Linky: Obliging Mama/Farm Pic

This morning was one of the coldest mornings thus far in this late fall/early winter season.   Thirty-one nippy degrees on the way to school drop off, all I wanted to do was get back home and plant myself in front of the wood stove to warm back up. 

But then I remembered Joey was due for his eight week mani and pedicure.  So after catching him in the pasture, I gave him a vigourous brushing which he thouroughly enjoyed and it helped me to warm up while waiting for the farrier to arrive.

Alongside where Joey was tied stands one of our barns with some Mama cows who happened to be enjoying this brisk morning, cozy in their rice hull bedding and basking in the sunshine chewing their cud.

TT w/Linky: Fall Dinner Party & Easiest Ever Roasted Asparagus

Before having kids we used to have many dinner parties here at home.  Inviting another family over, sharing a home cooked meal, some good wine and conversation was the norm.  It all changed after kids....now our parties are either big blow outs with 100 people or they are centered around holidays and birthdays.  

I have missed the evenings of the low-key dinner parties.  It is time to begin integrating small get-together's back into our lives.....as we did, just recently.  














One of my favorite veggie sides to serve is roasted asparagus.  It's the easiest thing ever, it can be prepared prior to your guest's arrival and just needs to be popped in the oven for 15 minutes when you're ready.



















No extra dipping garlic/mayo condiment is needed with this dish, just a drizzling of extra virgin olive oil and a sprinkling of your favorite spices....I use Emiril's Original Essence.  Then bake on a foil lined baking sheet at 450 degrees for 15 minutes and that's it!  SO good.




















For dinner we BBQ'd juicy, flavorful Tri Tip, served with rice pilaf, green salad and some garlic bread.....one of my all-time favorite combo's.

Before dinner we enjoyed some cocktails with our BBQ'd oysters.

















On this Thankful Thursday, I'm thankful for good friends, and the come back of the small dinner party.

TT w/Linky: Self Appointed

Do you remember when you were little and played 'teacher' or 'doctor' or 'mommy', etc?  I used to make-believe all the time when I was little...always wanting to be all grown up, something other than the little girl I was.

Being all grown up now, I realized sometimes adults {ok, me} can still play those games.  This morning on my ATV ranch ride, I decided to appoint myself as the official fence checker to the ranch.

I take every job I do seriously.

There's livestock that needs to be checked on, after-all.

My parents, immigrants from the "Old Country".  My Dad, Portuguese and from the Azores Islands and my Mom, an Italian born and raised in Brazil.  On my Dad's journey to America in the late 1950's, he stopped over in Brazil to stay with his older brother who had moved and made a life for himself there.

TT w/Linky: Ground Beef Tacos To Die For

If I had to pick just one summer go-to meal that I make quite often, it would most definitely be Tacos.....ground beef, chicken, shredded beef, you name it, I love them all.   We have a freezer full of ground beef right now, it's 90+ degrees outside ~ which also qualifies for a margarita night {or an ice cold beer} and I have a craving for some Mexican food.

Ground Beef Tacos are it.



























Ground Beef Tacos

Ingredients:
2 lbs ground beef
1 teaspoon salt
1 -2 tablespoon chili powder
2 tablespoons paprika
1 teaspoon cumin
1 -2 teaspoon garlic powder
1/2 green bell pepper, diced
1/2 cup onion, diced
corn tortillas
spinach or lettuce
Shredded Cheese
sour cream
salsa

Directions:  
1.  In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
2.  Bring to a boil.
3.  Simmer for about an hour.
4.  Add bell pepper, if desired and onion. Continue to simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
5.  Heat corn tortillas and fill 'em up!

TT w/Linky: The Almighty Peach & Peachy Chicken Salad

It's National Peach Day today and it just so happens I like mine best with a dab of whipped cream.  But today, Cheerios along with creamy whole milk will have to do....



















Fun Peach Fact:

The state of Georgia is actually ranked 3rd in peach production, behind California {1st} and South Carolina {2nd}.


California: 796 million pounds, annually.
South Carolina: 111 million pounds, annually.
Georgia: 86 million pounds, annually.

Thankful Thursday this week is all about my love for peaches.

Peachy Chicken Salad

Makes 4 servings
Ingredients
3 boneless, skinless chicken breast halves
2 large peaches, peeled and chopped
1/2 cup shredded carrots
1 cup shredded cabbage (Napa, red, green, or substitute broccoli slaw)
4 large Bibb lettuce leaves
2 tablespoons crumbled goat cheese
2 tablespoons chopped walnuts, toasted

Dressing
1/4 cup champagne vinegar
2 tablespoons extra virgin olive oil
1 teaspoon lemon juice
1 tablespoon Dijon mustard
1 tablespoon minced shallots
1 tablespoon fresh chopped basil
2 teaspoon honey
1/4 teaspoon salt
1/2 teaspoon pepper

Directions
1. Heat grill pan or grill to medium-high heat.
2. Spray the pan or grill with cooking spray, and place the chicken on it. Grill 5 to 6 minutes on each side until done.
3. Shred or chop the chicken and add it to the mixing bowl along with peaches, carrots, and cabbage.
4. Place the dressing ingredients in a separate mixing bowl; whisk to combine.
5. Pour the dressing over the chicken mixture and toss gently.
6. Arrange one leaf of Bibb lettuce on each plate. Divide the peachy chicken salad among the four plates.
7. Garnish with goat cheese and toasted walnuts. Serve immediately.

TT w/Linky: Sibling Rivalry

Summer is coming to a close.  At least when talking summer vacation from school.  No more mid-morning calf feeding or calf moving for Bryce and Paige, at least not for a while.  They will soon be back on school time, which means bedtime no later than 8:30 p.m. and breakfast at 7 a.m. and school from 8:15 to 2:45p.m.

Just yesterday the kids helped their daddy load up six calves to move across the road to the 'Woods'.  Something that Dominic could have easily accomplished on his own in about five minutes, took a good 15 with the kids.....oh, and me.

The kids were truly trying to help, donned with their spray bottles, set on 'stream' to help move the cattle.  Well they moved, scattered rather....in the wrong direction.

Mayhem for sure.

Giggles all around....except from Dominic, who just wanted to get his work done and move on to the next project.



















Once we made it over to the 'Woods', the spray bottles that Bryce and Paige used as calf movers turned on each other.  Sibling rivalry at its finest, will it ever end?!  Or will they forever pick on each other?

















The light at the end of the tunnel might be years away but I do catch a glimpse of it now and again and for that, I'm thankful.

Spaghetti and Turkey Meatball Casserole

While in New York we some how managed to catch the Pioneer Woman's Food Network show while getting ready on Saturday morning.  She was cooking Spaghetti and Chicken Casserole, which I had never heard of until then.  My room mates had their own family recipe for it and after quizzing them a bit, I decided I would come up with a modified version and cook it as soon as I got home.  I was inspired...and hungry.

Spaghetti and Turkey Meatball Casserole is what I came up with and this is how it all went down Tuesday night...


















Cook the spaghetti according to the package.  I used whole grain spaghetti.  Drain and place back in the pot.  Mix together 2 eggs and Parmesan cheese and add to the pasta and mix.  Press the spaghetti mixture in the bottom of a greased baking dish and set aside.  {FULL step by step recipe below}

















Mix together remaining egg, ricotta cheese and snipped basil and fresh ground pepper.

















So it ends up looking like this......

















Spread the ricotta mixture over the spaghetti.

















Caramelize your onions in some butter.

















Layer the onions on top of the ricotta and spaghetti and bake for 15 minutes at 350 degrees.

















Remove from oven and layer about one cup of marinara sauce over the onions.

















Mix thawed turkey meatballs with 3/4 cup marinara sauce and shredded mozzarella cheese.

















Place the meatball mixture over the spaghetti.

















Tent the entire dish with foil and bake at 350 degrees for 50 minutes.

















Remove from oven and top with more mozzarella, if desired.

















Enjoy!














Spaghetti and Meatball Casserole


Ingredients:

3 eggs, lightly beaten
2/3 cup grated Parmesan cheese
8 ounces packaged dried spaghetti
3 cups thinly sliced sweet onions (2 large)
2 tablespoons butter or margarine
1 cup ricotta cheese {I used low fat}
2 tablespoons snipped fresh basil or 2 teaspoons dried basil, crushed
1/4 teaspoon black pepper
1 pound frozen cooked Italian meatballs, thawed {I used turkey meatballs}
1 24 - 26 ounce jar purchased tomato and basil pasta sauce or marinara sauce
1 1/2 cups shredded mozzarella cheese (6 ounces)
Small fresh basil leaves
Shaved Parmesan cheese

Directions:

Grease a 7 x 11 baking dish.

For pasta ‘crust’, in a small bowl stir together two of the eggs and the grated Parmesan cheese; set aside. In a large saucepan cook pasta according to package directions. Drain pasta; return to saucepan. Add egg mixture, tossing to coat. Press pasta mixture into bottom of prepared baking dish, building up side slightly. Set aside.

Meanwhile, in a large skillet cook onions, covered, in hot butter over medium-low heat about 15 minutes or until onions are tender and lightly browned, stirring occasionally. Uncover; increase heat to medium. Cook about 5 minutes more or until onions are golden brown, stirring occasionally. Remove from heat.

Preheat oven to 350 degrees F. In a small bowl stir together the remaining egg, the ricotta cheese, the snipped basil, and the pepper. Spread ricotta cheese mixture over pasta crust. Top with caramelized onions. Bake for 15 minutes. Spoon 1 cup of the pasta sauce over layers in pan. Sprinkle with 1/2 cup of the mozzarella cheese.

Toss meatballs with 3/4 cup of the pasta sauce and 1/2 cup of the mozzarella cheese. Arrange meatball mixture over layers in pan, forming a mound. Top with 1/2 cup of the remaining pasta sauce (reserve remaining pasta sauce and mozzarella cheese).

Tent pie lightly with foil; bake for 45 to 50 minutes more or until heated through. Sprinkle with remaining mozzarella cheese. Let stand, uncovered, on a wire rack for 15 minutes. Using a serrated knife, cut casserole into squares. Garnish with basil leaves and shaved Parmesan cheese before serving. Heat and pass remaining pasta sauce.

TT w/Linky: Avila Beach, Cousins & BlogHer12

On our recent trip to San Luis Obispo, we were able to hit the beach, Avila Beach, a favorite for us.  It was foggy when we arrived but by 11 a.m., the fog had burned off and it was a warm 68-70 degrees.

On this 'Thankful Thursday' I am thankful that my sister-in-law packs surongs in her beach bag because for some crazy reasoning, we thought we would just head to Avila for a 'walk' on the beach and didn't bring swim clothes for the kids OR a change of clothes....what were we thinking?!

As soon as we stepped foot on the beach, the kids made a bee-line for the water.  Clothing completely soaked within minutes.  But that's okay.

TT w/Linky: Sonoma-Marin Fair Day One & Giveaway

Fair time =  Long, exciting and extremely fun days.  Yesterday was our first day, out of five and already the kids began to ask about riding the carnival rides.  For us, carnival rides will not happen until the end of the week {unless, of course, a willing adult other than myself wants to escort the kids over before then}but for us, it's mainly about the show animals.  Caring for them, hanging out at the RV - livestock lot...almost like camping out for a week.

Yesterday we found furry creatures other than the cows we're more accustomed to hanging around.  

This is about as close anyone can get to a Fallow Deer, I'm sure.

TT w/Linky: May Barn Charmer


P.E. Day happens once a year at our rural one-room schools.  Our school, of nine students, visits another rural one-room school just a few miles away to complete their Presidential Physical Fitness Testing.  I drove five of the kids over in the morning and am so glad I did......thankful for the view on the way there.  

This barn, nestled among the trees has caught my eye every time I wind around this rural country route.....only twice a year, normally.  




















This 'Thankful Thursday' I'm thankful for the gorgeous scenery only miles away in just about every direction.

TT: Big Date

It's a very rare occasion when I can have one on one time with my oldest, Bryce.  Older kids tend to have busier schedules, more homework and longer days than their younger siblings.....in this case, Paige.

Paige was invited to a play date at her teacher's house, staying until well after dinner.  Bryce LOVES his 'mommy time' without his "Annoying sister" around.......will he EVER think his little sister is not annoying?....I don't know.

To make the afternoon EXTRA special on this scorching, hot day, we headed straight for the ice cream shoppe.  Bryce selected one of his favorites, Rainbow Sherbet and I splurged with Pistachio Almond.....OH SO GOOD!

TT w/Linky: Beef Short Ribs

Beef short ribs are sometimes used as a bribery tool in my house.  Bryce swims three days a week and after swim practice, he soaks in the hot tub to warm up before we head home.  The problem is, is that the kid never wants to climb out of the hot tub once he's there.  But one thing I can count on is, I know he'll ask me what we're having for dinner that night, so when I answered "Short Ribs", he was out, toweled off and half way over to the changing room before I had a chance to finish my conversation with one of the Dads at the pool.

The Crock Pot is my best friend in these times of little league games x's 2, swim, dance class and 4H meetings.  I don't know how I would live without it.  I will try almost anything in the Crock Pot/Slow Cooker.  We had one remaining London Broil in the freezer so for the first time ever, I tried it in the Crock Pot.

TT w/Linky: Hunker Down

We are hunkering down for the week.  As much as I've been enjoying our warm winter with temperatures reaching into the mid 70's, much needed rain is here at last and heading our way the entire week.

The five month old calves currently pastured in our 'front yard' will be completely thankful for the buckets of rain we're receiving when, in a few weeks, they'll reap the rewards in the form of even more lush, green pasture grass.

TT w/Linky: Green Grass Virgins

We've had an early spring here in California.  A non-existent winter when it comes right down to it, actually.  With our scattered rain showers and tons of sun, we have some very rich, long green grass early in the season.

Since rain is not scheduled to be in the forecast any time soon, we're able to let our little lawnmowers out earlier than planned.

The calves in this group are about five months old and today is their first time out on live grass......not the straw that they're use to.  Oh, and it was their first trailer ride as well.
