Cinco De Mayo Recipe Roundup

Oh boy....Cinco De Mayo rates right up there as one of my favorite eating holidays of all time.  I can eat Mexican food almost every day of the week.

Here are a few of my favorites......


This black bean dip is actually very healthy for us, it's just the chips we need to watch out for.  This is a great, easy recipe to whip up for backyard barbecues and parties as well.  I hope you'll enjoy it as much as I do.

Healthy Black Bean Dip

 


Ingredients you'll need (list below)

Mash up the black beans to where they are still chunky.
Ingredients
1 can black beans
1 tsp. oil
½ cup chopped onion
2 garlic cloves, minced
½ cup diced tomatoes (I use onion & garlic canned diced tomatoes)
1/3 cup salsa
½ tsp. cumin
½ tsp chili powder
¼ cup Monterey Jack Cheese, shredded
¼ cup chopped cilantro
1T fresh lime juice

DirectionsMash beans in bowl until chunky. Heat oil in skillet over medium heat. Add onion and garlic, sauté for 4 minutes. Add beans, diced tomatoes, salsa, cumin, chili powder and cook for 5 minutes or until thick. Stir and remove from heat. Add cheese, cilantro and lime juice. Stir well.

Serve warm or at room temp.





EASY Guacamole
I used to buy pre-made guacamole as we have many varieties available here in California, until my friend, Heather, turned me on to a super delicious and extremely easy way to whip up a batch in no time flat.




All you need is guacamole seasoning package, I use McCormick's, and two California avocados.  I normally add some lime juice and some chopped red onion to taste as well.





Slice two ripened avocados, add the contents of the guacamole seasoning packet and mix.  Squeeze in some lime juice and chopped red onion and or chopped tomatoes, if desired.  Mix until all ingredients are combined.




Refrigerate and eat for lunch... or any time of day.

It's like a hearty one dish meal you can throw together within 10 minutes!   Perfect with any beverage....margaritas, beer, sangria, MILK, Yum.







I began layering; chips, cheese, yellow and orange bell peppers, onions, ground beef and black beans.






A high protein meal, the entire family could devour.















Add a little salsa and or guacamole and sour cream.....perfect.

Here's what you need for success:

Ingredients:
Tortilla chips or pita chips
cheese of choice, I used low fat mozzarella, grated
1 pound of ground beef
taco seasoning
1 can of black beans
bell peppers
1 small red onion
tomatoes, chopped if you have them
and any other topping you feel like chopping up and adding
Salsa
Sour Cream

Directions:
Place ground beef in a skillet and brown.  Add taco seasoning to taste and cook a little longer.  Set aside.

Line a baking sheet with aluminum foil.  Place the tortilla chips on the foil.  Sprinkle grated cheese on top of chips, layer with bell pepper, red onion, browned ground beef and black beans.

Place in oven on broil for 4-5 minutes.  Just long enough so the cheese is good and melted.
Serve with salsa, sour cream or guacamole if desired.

Baked Nachos! Happy Cinco De Mayo!

 Mexican food is definitely one of my favorite foods to eat.  Any day, any time.  I LOVE it.  Spicy, mild, I'll take it either way.  These flavorful baked nachos are one of my favorites to make at home.  Super easy and they're different every time, depending on what I have on hand in the fridge.

With Cinco De Mayo coming up, I had to re-post my recipe for the family favorite......

"BOTW" Shredded Chicken and Corn Tostadas

If Thanksgiving is my favorite holiday....mostly because it has everything to do with eating and drinking, then Cinco De Mayo comes in as a close second..... Mexican food and margaritas.  What can be better if you're a Mexican food lover like myself?!

Cinco De Mayo is coming up and  when you love Mexican food as much as I do, it's a great excuse to have it more often than not.  So you may be seeing a few more Mexican recipes leading up to May 5th....probably some margaritas too.

Arrribe! Mexican Recipes

Happy Cinco De Mayo!  I LOVE Mexican food and I love me a good margarita!  I was in Target the other day and on my list, was frozen fruit.....for smoothies.  I found a blend that I hadn't seen before....Berry Mango Fruit Mix.

At the time, I didn't have margaritas on my mind, but two days later, hey Cinco De Mayo.....margarita required.

Happy Cinco De Mayo

Happy Cinco De Mayo everyone!  Here are some great recipes for a fiesta or just for yourself.  I think I've found my new 'Party Drink' and I'm so excited!  Normally I stick to margaritas for a big party but next time I'm definitely serving this tasty sangria instead.  So easy to prepare, easy to triple the recipe for a party and smooth going down.

The tortilla pie can also be prepared ahead of time so all you have to do is pop it into the oven for your party.

Tortilla Pie

Ingredients
- 4 10-inch flour tortillas
- 1 tablespoon olive oil
- 1 medium onion - chopped
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon red pepper flakes
salt and pepper to taste
- 2 tablespoons tomato paste
- 1 pound ground beef
- 3 cloves garlic - minced
- 1 package (10 oz.) frozen corn kernels
- 1 (10 oz.) can of tomatoes with green chiles - drained
- 1 (15 oz.) can garbanzo beans (chickpeas) - drained
- 3 cups loosely packed spinach - torn into pieces
- 2 cups Monterey Jack cheese or Colby cheese - shredded
fresh cilantro for garnish (optional)
sour cream (optional)
favorite salsa (optional)


Container: 9 inch springform pan, skillet, baking sheet or foil
Prep Time: 30 minutes
Cook Time: 20 minutes



Preheat oven to 400°.

Lightly spray or grease the bottom and sides of a springform pan.

In a skillet over medium heat, add olive oil, onion, cumin and red pepper flakes, season with salt and pepper.

Cook until onion has softened - 3 to 5 minutes.

Stir in tomato paste.

Add hamburger and garlic, crumble hamburger as it cooks until no longer pink.

Add corn, spinach, diced tomatoes and garbonzo beans (chickpeas).

Stir and cook until spinach has wilted, approximately 2 minutes.

Place 1 tortilla in the bottom of the springform pan.

Spread approximately 1 1/2 cup of the beef mixture evenly on top.

Then sprinkle on 1/2 cup cheese.

Repeat with 2 more layers and top with the last tortilla.

Sprinkle with the remaining 1/2 cup of cheese.

Set springform pan on a baking sheet or on top of foil to catch any drippings while being baked.

Bake pie until slightly browned, 15-20 minutes.

Run a knife around the edge of the pan and remove the sides.

Allow to cool slightly.

Using 2 wide spatulas, lift the pie from the bottom of the pan and transfer it to a serving platter or cutting board.

Cut into wedges.

Serve with cilantro, sour cream, and salsa if desired.


Sangria

This is a great Party Drink.  Make it ahead of time and chill.  Serve in a beverage dispenser for your fiesta!

Ingredients

3 cups ice cubes
1/4 cup lemon slices
1/4 cup lime slices
1/4 cup orange, slices
1/4 cup pineapple chunks
1/4 cup seedless grapes
2 cups red wine
1/2 cup peach brandy
1 cup orange juice
1 cup lemon/lime soda

Directions
In a pitcher, add all the ingredients and stir to combine. Ideally, you want to wait about 1 hour for the fruit and the wine to infuse each other, but you can drink it right away.
