Crock Pot Chicken Apple Curry

Wednesdays in our house are Crock Pot dinner nights.....with baseball practice at 5-7p.m., soccer practice from 6-7p.m., these kids are hungry by the time we get home at 7:15 and something needs to be ready to go by the time we get home.

I really enjoy the chicken Crock Pot meals, because they only take four hours to cook and if I'm out of an ingredient or two, I have time to run to the store in the a.m. without feeling rushed to get the meal in the Crock Pot right away.
















This Crock Pot Apple Curry recipe was a hit the other night.  It was my first time making it and although I love the curry flavor, I was a little aprehensive making it for the family, but it was a HIT!









































Crock Pot Apple Curry

Ingredients:
2 1/2 lbs boneless, skinless chicken breasts and thighs
3/4 tsp salt
1/2 tsp ground black pepper
3 apples, peeled, cored and cut in 3/4 inch slices
1 onion, sliced in wedges
1 can (14 oz) stewed tomatoes, undrained
1 cup apple juice
14 oz water
1 T curry powder
2 tsp chopped garlic
1/2 cup raisins
1 cup uncooked rice

Salt and pepper the chicken, place in the Crock Pot.  Pour in rice, onion, apples, garlic, raisins, stewed tomatoes, top with onion and apple slices, pour the apple juice and water over the top.  Cook on high for four hours until done.
