Christmas Treats ~ Easy Oreo Truffles

There is almost nothing I like better than an easy, elegant looking dessert that will appeal to almost everyone.  I mean, we're talkin' Oreo cookies here!....you know, "Milk's favorite Cookie"?!

Oreo's covered in chocolate with an ice cold glass of milk....mmmm, mmmm.

The asembly of this recipe reminds me of the Melting Snowmen Cookies I showed you last week.....so easy and kids just love helping with this one in the kitchen.

My 'Best of the Web' for the week before Christmas is from Midwest Living.

Oreo Truffles

15.35-ounce package chocolate sandwich cookies with white filling

8-ounce package cream cheese, softened
1 2/3 cups dark chocolate pieces or white baking pieces (10 ounces)
tablespoons shortening
1/3 cup white baking pieces or dark chocolate pieces (2 ounces)

1.    In a food processor, place one-quarter of the cookies. Cover; process until finely crushed. Transfer crushed cookies to a large mixing bowl. Continue processing and transferring with the remaining cookies.
2.    Beat crushed cookies and cream cheese with an electric mixer on low speed until well combined. Using hands, shape the mixture into 1-inch balls. Place balls on a waxed paper-lined baking sheet and freeze for 15 minutes or until firm.
3.    Meanwhile, in a heavy, medium saucepan, melt the 10 ounces of chocolate and shortening over low heat, stirring until smooth. Remove from heat and cool slightly.
4.    Use a fork to dip truffles into chocolate mixture, allowing excess chocolate to drip back into saucepan. Place truffles on a waxed paper-lined baking sheet; freeze for a few minutes until firm or chill in the refrigerator or until firm.
5.    In a heavy, small saucepan, melt the 2 ounces chocolate over low heat, stirring until smooth. Place melted chocolate in a quart-sized re-sealable plastic bag. Snip a small corner of bag and drizzle chocolate over tops of the truffles. Chill for a few minutes until set. Store in refrigerator. Let stand at room temperature for about 30 minutes before serving

  3. You can dip these with a small ice cream scoop, just make sure that you pack the mixture in very tight, that makes sire they are all near the same size.
