Are you looking for ideas on what to do with your turkey leftovers, like I am? I found this easy turkey soup recipe that's healthy and looks delicious. It uses whole wheat pasta, lots of veggies and one of my favorites; kale. I'll be making a pot of this tonight.

Ingredients:
1 medium onion, chopped
2 carrots, chopped
2 celery ribs, thinly sliced
2 cloves garlic, minced
4 cups low-sodium chicken broth or homemade turkey broth
4 sprigs fresh thyme
1 bunch kale, thick stems removed and leaves sliced
thinly
2 cups whole wheat elbow macaroni
2 cups cubed or shredded turkey breast
¼ tsp freshly ground pepper
Directions:
Heat a large saucepan over med-high heat until hot. Add onion, carrots, celery and garlic and
cook 6-7 minutes or until veggies are tender and beginning to brown, stirring
occasionally. Stir in broth, 4 cups
water and thyme and bring to a boil. Add
kale and macaroni and return to boil.
Cook about 5 minutes or until macaroni is al dente. Stir in turkey and pepper and cook 2-3
minutes longer or until turkey is heated through. Remove thyme sprigs before serving.

We made soup yesterday! Made broth from the carcass, lots of veggies and some seasonings. Today we will finish it off with pasta and rice! Yummy!
