Gooseberry Patch Simple Shortcut Recipes

Six months ago I submitted one of my favorite dessert recipes to Gooseberry Patch with the hopes of it making it into one of their cookbooks.  If you haven't heard of Gooseberry Patch cookbooks, they publish fabulously themed cookbooks that feature recipes from people like you and me, from across the nation.  So, if you have a fantastic family recipe you would like to share, send it in to Gooseberry Patch!  It's fun to have some family history in print.























The recipe I submitted is for Simple Fruit Cobbler.  I like to make this dessert for dinner parties because you can prepare it ahead of time and when you're ready to sit down to dinner, just pop it in the oven and by the time the meal is finished, you'll have a warm, delicious dessert to serve to your guests.
You can also modify the recipe to bake in individual ramkins like this......


Simple Fruit Cobbler

Ingredients:
1/2 cup long-cooking oats, uncooked
1 cup biscuit baking mix
1/4 cup brown sugar, packed
1/2 tsp cinnamon
1/4 cup butter
6 cups frozen mixed fruit
1/4 cup sugar
Vanilla ice cream or whipped cream {optional}

Directions:
In a bowl, combine oats, baking mix, brown sugar and cinnamon; cut in butter until mixture resembles coarse crumbs.  Set aside.  In an ungreased 2-quart casserole dish, layer fruit; sprinkle evenly with sugar.  Crumble oat mixture evenly over fruit.  Bake at 350 degrees for 45 minutes, or until hot and bubbly.  Top individual servings with ice cream or whipped cream, if desired.  Serves 8 to 10.
