On the 5th Day of Christmas ~ Seven Layer Cookie

As part of our Christmas cookie baking tradition here on the ranch, one of the recipes that is baked every year is this Seven Layer Cookie and there's nothing low fat about this one.  You can throw it together in a few minutes and even can create your own layers according to your taste.

This year we used semi-sweet chocolate chips, butterscotch chips and toffee bits.  But you can put together a mint chocolate chip with white chocolate chips, etc.


















You start out by melting 1/4 cup of butter and pour it into the bottom of a 9 x 13 baking dish.  Add around six or seven crushed graham crackers to that.

















Then add shredded coconut on top of the graham crackers and begin layering with the chocolate, butterscotch and toffee chips.

















Once you have all your layers in place, pour a can of sweetened condensed milk over the top.

















Finish the top layer with chopped walnuts and press lightly.
















Bake at 350 for 30 minutes....it's that easy!
















And there you have it.

















I think this would also be good if the graham crackers were substituted with crushed saltine crackers....I like that sweet and salty combo.

Seven Layer Cookie


1/4 cup butter
1 cup graham cracker crumbs
1 cup shredded coconut
1 - 6 oz package semi-sweet chocolate chips
1 - 6 oz package butterscotch chips
1 package of toffee chips
14 oz can of sweetened condensed milk
1 cup chopped walnuts

Directions:
Melt the butter, pour into a 9 x 13 baking dish.  Spread graham cracker crumbs then the coconut.  Place chocolate, butterscotch and toffee chips down in layers.  Pour the sweetened condensed milk over the top.  Spread nuts over the top and press lightly.

Bake in a 350 degree oven for 30 minutes.
