As most of you know, I volunteer at Bryce's school twice a month to teach the 1st Graders a cooking class....all five of them {he goes to a one-room school}. So imagine how loud it can become when five boisterous six year olds find out we're baking a Cookie Pizza, topped with chocolate and m & m's! The most difficult part for me is to try and keep all of their high pitched voices down, as to not disturb grades 2-6th next door in the other room. We do our best.
So here are the ingredients you'll need {recipe below}.
Mix all the ingredients together, sugar, brown sugar, egg, butter and vanilla first. Then add the flour and baking soda. Stir, Stir, Stir. Dough should be stiff.
I had never made this recipe before, and I didn't realize that a regular sized cookie sheet would be too large. So, I had the kids spread the dough on only half the pan. I was sure it would turn out just fine.
Until I went to put the pan in the oven. Whoops. One of the things I tend to forget about the little one room school is that everything is in mini-me sizes, including the oven. This is when I taught the kids to improvise. One can make almost anything work if one tries.....right? I then, secretly began to pray. Please, please, PLEASE turn out!
Half way through the baking process, I took a peek and saw that the batter was sliding off the edge to one side, onto the bottom, inside of the oven. Improvise again, tip the pan in the other direction. Finish baking.
The "Topsy Turvy Cookie Pizza" was then renamed to "Molten Lava Cookie Pizza", which the kids liked even better!
After melting the chocolate and allowing the 'cookie' to cool, the kids spread the chocolate to cover the cookie.
Sprinkle with m & m's and slice with a pizza cutter.
This was GOOD! And it didn't look half bad either.
Clean up time!
Topsy Turvy {Molten Lava} Cookie Pizza
Ingredients:
• Non stick baking spray
• 1 egg
• ½ cup packed brown sugar
• ¼ cup sugar
• ½ cup {1 stick} butter
• 1 tsp. vanilla
• 1 ¼ cups flour
• ½ tsp. baking soda
SAUCE:
• 1 cup chocolate chips
• 2 T butter
• 3 T milk
• 1 cup powdered sugar
• ½ cup m&m’s
Directions:
Preheat oven to 350. Spray baking pan with non stick spray. Crack egg into bowl, add brown sugar, sugar, ½ cup butter and vanilla to egg. Stir with wooden spoon until mixed. Add flour and baking soda to sugar mixture. Stir until mixed {dough will be stiff}. Spread dough in the greased pan, using back of spoon or hands. Bake for 15 minutes or so until crust is golden. Cool for 10 minutes.
For sauce: put chocolate chips, 2 T butter and milk in saucepan. Cook over low heat about 5 minutes, stirring all the time with the wooden spoon, just until chocolate chips are melted. Add the powdered sugar to chocolate mixture and stir until smooth and shiny. Spread sauce over crust and sprinkle m&m’s.
