If you are referring to Somatic Cell Count which is the white blood cell count that is found naturally in all animals, they are there to help fight off infection. If a cow has a higher somatic cell count it means she’s working harder to fight off an infection. If a cow has an infection, she is not milked into the bulk milk tank, her milk is discarded. Milk is tested for somatic cell count and California has higher standards on Somatic Cell Count than the rest of the nation. <br /> <br />On our farm, before each cow is milked with the milking machine, each quarter {teat} is milked or {stripped} by hand to check for any sign of infection, such as mastitis. It is very apparent if there is an infection by how the milk looks.
